The highly anticipated fifth release in Macallan's annual series that analyses individual aspects of the whisky making process in minute detail. This time it's all about the whisky's 100% natural colour… Partnering with the colour experts at Pantone, Macallan has created a rich and spicy Single Malt aged in Bourbon and Sherry barrels, with the latter including first-fill casks from respected producers such as Vasyma, Hudosa and Tevasa. The whisky itself is a complex dram with warming notes of oak, nutmeg, ginger, thick-cut marmalade and clove, which are all feel very fitting for its release so close to Christmas. But there's also interesting layers of tinned peaches, toffee, Thai basil, kaffir lime and that chocolate and pear combo of Poire belle Hélène. So, it's no surprise that Pantone chose "the rainbow's most complex colour" for the label, which is a bright and quite unique shade of purple. As ever, we expect this highly collectable release to be snapped up by Macallan fans, so don't miss out. "Macallan is the daddy, as far as legendary whiskies go," so says whisky expert Ian Buxton. This Speyside behemoth enjoys huge global demand, perfectly illustrated by a 30-year-old cask breaking auction records when it sold for $375,000 (US) in Hong Kong. Braes of Glenlivet is a name you don't hear very often. Built in the 1970s by Chivas, the distillery's name was changed to Braeval in 1994 to avoid confusion with Glenlivet. This whisky was made just before the name change, before the distillery was sold to Pernod Ricard and before they mothballed it. Luckily, some of the fabulous spirit produced here was rescued by the Chivas Brothers and is slowly filtering on to the market as part of the Secret Speyside Collection. In fact, as far as we know, this is the first official release from Braes of Glenlivet, which is one of the highest distilleries in Scotland. Distilled in 1994, matured in first-fill American oak for a quarter of a century and bottled in 2019, Braes of Glenlivet 25 Year Old is a Rare Release indeed. It's a unique medley of classic desserts, fruit salad and Thai curry; jam roly-poly and custard, stewed plums, honey and marmalade mingle with cantaloupe melon, apricot, red apple and pear, underpinned with lemongrass, kaffir lime, coconut milk, coriander, cardamom and a pinch of fiery chilli. Born in the hills and tasting like it has been laced with warming, golden sunshine, this is definitely one to charge the hip flask with when going on hikes in the Highlands.£56.43 per 100.00ml

Tormore 1995 23 year old is one of the first eight releases in this stunning range. These premium Octave™ whiskies have been held in sherry casks to intensify their flavours and add a new dimension to their flavour profiles, bringing out the very best in each rare dram. Bottled at cask strength there was 87 bottles created of this stunningly presented whisky. Octave™ casks are approximately 1/8th the size of a butt and each one creates around 80 to 100 bottles. Duncan Taylor Scotch Whisky, who trademarked The Octave™ name over 15 years ago, have now increased their portfolio to over 45 different Octave™ whiskies and are selling them in 50+ countries. === Tasting Notes Nose - Mountain fresh, piney, herbal and grassy. Spicy fresh green olive oil. Over time, the sherry comes forward with darker treacle. Taste - Much fruitier than on the nose with bright lime citrus. Herbs still there with lively Thai basil and fresh mojito style mintiness, drizzled with a honey rosemary marinade. Finish - Medium to long with an initial hint of fresh pepper before the citrus reasserts itself. Juicy oak with a saline hint.
