The modern chef's knife is a multi-purpose knife designed to perform well at many different kitchen tasks, rather than excelling at any one in particular. It can be used for mincing, slicing, and chopping vegetables, slicing meat, and disjointing large cuts. The all-purpose or utility knife is the perfect accompaniment to the chef's knife for multiple slicing and chopping tasks, but allowing for finer work, making shallow cuts and incisions and for any cutting where greater control over a small area is required. More specialised in its use, a carving knife is often a little longer than a chef's knife, but far narrower, and without the chef's knife's customary curve.
